Bivrost® Alfheim Single Malt Whisky is handcrafted at the world’s northernmost distillery in Arctic Norway, at 69 °N. The malt is made from Nordic barley, distilled in our hi-tech still, and diluted with glacial meltwater. This is a fusion of modern distilling technology and tradition. The whiskey has been matured in carefully selected ex-bourbon casks and virgin casks made from French oak, American oak, Chinquapin oak, and Colombian oak. It was allowed to mature in an old, underground NATO storage facility as well as a modern Viking longhouse. The temperature variations are vast, with an average yearly temperature of only 0.6 °C. YEAST: Brewers yeast. Saccharomyces eubayanus, Lager yeast MALT: Pilsener Malt, made from Planet and Popino Nordic barley. Water is sourced from Elvejordvannet, which receives melted glacier water from the Lyngen alpine range. DISTILLED: Distilled in 2018–2020, with two active plates in our copper pot or column still. Average distillation time ranges between 8 and 10 hours, and the average strength of the heart collected from the undiluted new make is around ~75% abv. CASK HANDLING: Alfheim was matured in different virgin oak casks, built from various oak types from around the world. The oak types are French oak (Quercus robur), American oak (Quercus alba), Chinquapin oak (Quercus muehlenbergii), and Colombian oak (Quercus humboldti). NB: Some of the contents are now more than 5 years old!
